"Couscous Salad"

Ingredients:

  • 1 C Couscous

  • 1 1/2 C water

  • 6 green onions

  • 1/2 bunch fresh dill (2 or 3 T dry)

  • 10 - 12 leaves of basil (1 - 2 T dry) 

  • 6 - 8 oz. spinach, frozen or fresh1/3 C 

  • Olive oil

  • 1 clove garlic

  • 1 T salt

  • 2 T fresh lemon juice 

Directions:

 *Bring water to boil, then turn the burner to low and put the couscous in, stir  and cover for 15 minutes. 

*Turn the burner off after ward.  

*Chopped spinach small, minced the garlic and dill and mix with the rest of  the  ingredients and the couscous. 

*PS: Couscous is the middle easterner dish, it is delicious and very nutritious.

* It is a very good source of protein. *Couscous may be found in the health food store, they look like millet.
