Easy Chili

This recipe looks hard because of all
the ingredients, but it really is good. I hope
that the long list of ingredients won't scare
anyone away. My husband usually doesn't like
chili, but after experimenting, he enjoyed this
one. I hope you will too.
Ingredients:

1 tbsp vegetable oil

1 cup onions, chopped
-
3/4 cup carrots, chopped
3 cloves garlic, minced

1 cup green bell pepper, chopped
1 cup red bell pepper, chopped

2 tbsp chili powder
-
1 1/2 cup fresh musrooms, chopped

1/4 cup tomato paste
-
2 bouillon cubes
-
3/4 cup chopped celery
-
1 (28oz) can chopped tomatoes

1 (19oz) can red kidney beans, rinsed and
drained

1 cup frozen whole kernel corn
-
2 tbsp ground cumin
-
1 1/2 tsp oregano
-
1 1/2 tsp crushed basil leaves
-
1 1/2 tbsp cocoa powder
-
1 tbsp sugar
-
1/4 cup barbecue sauce
1 1/2 cup water

2 tsp salt
Directions:
*Heat oil in a large saucepan and add onions,
carrots, and garlic; saute til tender.
*Stir in bell peppers, celery, and chili powder.
Cook, stirring often until veges are tender,
about 6 minutes. *To the vegetables, add
mushrooms; cook 4 minutes. Stir in tomatoes,
kidney beans, corn, cumin, oregano, basil,
barbecue sauce, salt, bouillon cubes, and water.
Cover and simmer for 20-30 minutes, stirring
occasionally. |
